I intend to remain gluten-free for a month. I'm on day 5 and feeling great!

WHY? To see if gluten is behind my fibromyalgia and other autoimmune issues.

Day 1 (Friday): Less brain fog, confusion.
Day 2 (Sat): Thinking more clearly, more alert.
Day 3 (Sun): More alert, more energy. Was able to work in the yard longer and lift bags of stone again.
Day 4 (Mon): Noticed on top of all of the above, I'm not as gassy as usual. Less stomach pain.
Day 5 (Tues): All of the above and then some. I'm feeling better every day. This is amazing and it's only day 5!

You can do it. I've been gluten free for two years now. I'm sure you've found some good gluten free products. My favorites are Pamela's pancake mix and Udi's bread. I use Bob's Redmill GFree flour and just substitute it for regular flour in all my recipes. I add xanthum gum to it as well.
